Why not enjoy this delicious vegetable all year round? Here are a couple of ideas for you. Here is a recipe Zucchini Crisp. It is really yummy and as long as you don’t tell anyone they will probably never know that it is not apples.
- 3 cups small cubes Zucchini
- Sprinkle with lemon juice and set aside.
- Topping mix
- 1 cube butter softened
- 1 cup flour
- 1/2 cup brown sugar
- 1/2 cup white sugar
- Sprinkle nutmeg and cinnamon on top of zucchini
- Sprinkle topping and bake.
I took the rest of that big zucchini and shredded it with my Bosch slicer, dicer. I looked up my favorite zucchini bread recipe. I measured the amount I needed and put it into freezer bags, flattened them out and put them into the freezer. You could also cut them into cubes and put some in the freezer for more zucchini crisp.
