What to do with all of the zucchini? Hopefully, this post will help you out so you don’t have to run around the church parking lot looking for all of the unlocked cars just so you can get rid of it. Just joking!
You wait and wait for all that squash to be ready in your garden, when it is ready you start to get sick of eating it and look for ways to give it away. Why give it away? Why not enjoy this delicious vegetable all year round? Here are a couple of ideas for you. Here is a recipe for Zucchini Crisp. It is really yummy and as long as you don’t tell anyone they will probably never know that it is not apples.
- 3 cups small cubes Zucchini
- Sprinkle with lemon juice and set aside.
- Topping mix
- 1 cube butter softened
- 1 cup flour
- 1/2 cup brown sugar
- 1/2 cup white sugar
- Sprinkle nutmeg and cinnamon on top of zucchini
- Sprinkle topping and bake.
I took the rest of that big zucchini and shredded it with my Bosch slicer, dicer. I looked up my favorite zucchini bread recipe. I measured the amount I needed and put it into freezer bags, flattened them out and put them into the freezer. You could also cut them into cubes and put some in the freezer for more zucchini crisp.
