French fries have got to be one of my favorite foods. The only bad thing is they are so unhealthy to eat. But there are healthy exceptions to this statement!
Baked French Fries
Baking french fries with olive oil is so much healthier than the traditional way of deep-frying them in vegetable oil. The flavor is awesome and they can be crispy or soft, just the way you like.
The potatoes I am using in the pictures are Yukon Gold. We grew the potatoes in our garden. They have good flavor and are great for making french fries. Any type of potato can be used for french fries.
Preparing potatoes
The first thing you do is choose your potatoes. I like to use bigger potatoes but any size is perfect. We like the skin on our fries so I do not bother peeling them. I slice the potatoes to the size of fry I like. My preference is thinner but some people like thicker fries. The size of the potato may change the amount of cooking time.
After slicing the potatoes into french fries I place them into boiling water for 3 minutes. Boiling them for 3 minutes cooks them slightly. If you boil them too long they will fall apart. This will also keep the potato from turning brown.

When the 3 minutes is up I pour the boiled potatoes into a strainer.
The next step after straining the french fries is seasoning and preparing them for the oven. I like to use olive oil, seasoning salt and salt to taste.

There are many other seasonings you can use on your french fries. We have used garlic powder and garlic seasoning. We really liked the flavor. There are so many options, it is fun to experiment and see what you like to use best.
Coat the french fries lightly with olive oil and add the salt and seasoning.
I like to let them sit for a few minutes in the bowl. This lets the oil and seasoning soak in a little bit to enhance the flavor. If you are in a hurry you can skip this step. Once completed, it is time to put them onto the cookie sheet.
Prepare ahead of time
(Not quite ready to cook your french fries. They can be prepared up to this step ahead of time and put into the refrigerator until you are ready to cook them.)
Spread them onto the cookie sheet in a thin layer. A thin layer will help the fries cook quicker and more evenly.
Cook for 15 minutes and then turn the french fries over. Continue to turn the fries over every 10 minutes until they are cooked to your desired crispness.

Instructions

Slice potatoes the size desired for french fries

Place in boiling water for 3 minutes

Strain

Coat with olive oil and salt

Arrange on a pan

Cook for 15 minutes, next turn over every 10 minutes until desired crispness
